Easy Egg Bake

Ingredients:
Makes 4-6 servings
350 oven
9x12 pan
12 egg white or 2 small boxes of egg beaters
3/4 cup salsa
1 cup raw mushrooms
1 cup raw broccoli
1/2 cup cottage cheese
1/2 container refrigerator biscuits (peel into 1/4 inch layers and line inside of pan)
Or use 1/2 package of shredded hash browns

Instructions:

• Place lined pan into oven while oven pre heats to crisp up biscuits or hash browns
• Mix up eggs, salsa and cottage cheese
• Once oven is ready, pull out pan, add egg mix and place veggies on top
• Sprinkle with grated parmesan cheese
• Bake 25 minutes or until just slightly firm in center
